Ingredients: 

2 12.5 oz cans of chicken breast or 2 cooked chicken breasts, diced
½ yellow pepper, diced
2 celery stalks, diced
¼ cup slivered almonds
1/3 cup Smart Balance Omega Plus mayonnaise
1 tbsp cherry preserves
1 tbsp apple cider vinegar
1 tsp curry powder
¼ tsp garlic powder
¼ tsp salt
½ tsp pepper

STEP 1:

 

In a bowl, combine the chicken, yellow pepper, celery and almonds.

In another bowl, combine the mayonnaise, preserves, vinegar, curry, garlic, salt and pepper. Mix well.

Pour the mayonnaise mixture over the chicken and stir until well combined.

Chill for 2 hours or more before serving.
