A quick and easy dinner for the pasta lovers in your family. The sour cream really gives a nice spin to the traditional tomato sauce.

Ingredients: 

4 cups uncooked rotini pasta
1 pound lean ground beef (90% lean)
1 can (10 3/4 ounces) condensed tomato soup
1 can (14 1/2 ounces) diced tomatoes
1/2 cup diced green pepper
1 cup chopped fresh mushrooms
1 teaspoon dried oregano
1/2 cup Smart Balance Reduced Fat Sour Cream
Salt to taste
1/3 cup shredded Colby or Cheddar cheese

STEP 1:

 

Cook pasta according to package directions.

STEP 2:

 

Meanwhile, in a large skillet, saute beef, mushrooms, and green pepper over medium high heat until browned. Drain.

STEP 3:

 

Stir the soup, tomatoes, and oregano into the meat mixture.

STEP 4:

 

Bring meat mixture to a boil; reduce heat and simmer for about 5 minutes.

STEP 5:

 

Stir in sour cream. Add salt to taste. Heat through.

STEP 6:

 

Drain pasta and top with meat sauce. Sprinkle with cheese and serve.
