Chopped Salad with Rotisserie Chicken

With the addition of a whole grain roll or wrap, this salad makes a satisfying and complete lunch.

Ingredients: 

2 cups sliced rotisserie chicken (skin removed)
2 cups fennel, thinly sliced
2 cups celery, thinly sliced
4 cups romaine lettuce, chopped
1/2 cup finely chopped herbs (can include basil, chives and parsley)
2 tablespoons Smart Balance™ Cooking Oil
4 tablespoons red wine vinegar
1/8 teaspoon salt
2 tablespoons finely chopped red onion

STEP 1:

 

Combine oil, vinegar, salt, pepper and red onion to make dressing. Set aside.

STEP 2:

 

Combine chicken, fennel, celery, lettuce and herbs.

Gently combine dressing and salad and serve.
