Recipe Ingredients

For Chicken:
¼ cup Smart Balance Omega Oil
½ cup dry white wine
¼ cup lemon juice
1 tsp salt
½ tsp pepper
1 tbsp minced garlic
12 chicken breasts

For Topping:
1 cup Italian bread crumbs
1 tbsp parsley
1 tbsp minced garlic
½ cup grated cheese
1 tbsp Smart Balance Omega Oil
1 tbsp Smart Balance Omega Plus Light Mayonnaise

Recipe Steps

Preheat oven to 400 degrees.

In a 13x9 glass dish, add the oil, wine, lemon juice, salt, pepper and garlic.

Add chicken breasts and toss to coat in the juice.

Cook for 20 minutes.

Meanwhile, in a bowl mix the bread crumbs, parsley, garlic, grated cheese, oil and mayonnaise.

Remove chicken from the oven after 20 minutes and top evenly with bread crumb topping.

Cook for an additional 15 minutes or until chicken is no longer pink inside.

Serve over linguine or with your favorite veggies.
